This cool and refreshing summertime treat is not only deliciously satisfying, it is chock full of beneficial nutrients, such as vitamins A and C as well as lycopene, which is an antioxidant, meaning it can neutralize harmful free radicals in the body.

Perfect for those warm summer days, this easy to make Watermelon Salad combines cucumbers, strawberries, feta cheese and mint, and is topped off with a balsamic glaze. It's the perfect mix of simple, savory and sweet.

Watermelon Salad


INGREDIENTS
 

  • Watermelon (preferably seedless) 
  • Cucumbers
  • Strawberries
  • Fresh Mint 
  • Feta Cheese 
  • Balsamic Glaze

DIRECTIONS

  1. Cut watermelon into bite-sized squares.
  2. Using a melon baller, scoop out round circles of cucumber.
  3. Slice strawberries into quarters.
  4. Combine seedless watermelon squares with the cucumber balls and sliced strawberries. Toss lightly.
  5. Top with feta cheese crumbles and finely chopped fresh mint before lightly coating the salad with balsamic glaze.
